Souffle Pancakes
Ingredients (8 pancakes):
- 8 eggs
- 80g milk
- 150g flour
- 1 teaspoon of vanilla extract
- 15g lemon juice
- 100g sugar
1. Seperate egg yolks and egg whites.
2. Mix egg yolks, milk and flour. Add the vanilla extract.
3. Make meringue by whisking egg whites and lemon juice and adding the sugar over time.
4. Mix the meringue with the dough.
5. Put a generous amount of dough onto your pan. Bake each side of the pancakes for about 5 minutes.
REAL GOOD pasta sauce
Ingredients:
- 2 (big) tablespoons of butter
- 1/2 diced onion
- 2 minced garlic cloves
- 2-3 tablespoons of tomato paste
- 200ml heavy cream
- 3-4 teaspoons of chili oil (get some of that sediment too!!)
- 1 pinch of salt
- a bit of italian seasoning or something like that
- 1 teaspoon of paprika powder
- a ton of shredded cheese
- some chili flakes
- I also like putting vegetables in but you don't have to
1. In a pan, melt the butter and saute the onion and garlic.
(also fry your vegetables if using any)
2. Put in the tomato paste and saute a little longer.
3. Add heavy cream and mix on low heat.
4. Seasonings and chili oil go in now.
5. Add shredded cheese.
Omurice
Ingredients:
- 1 serving of rice
- cooking oil
- mixed vegetables (however much you like)
- 1/4 diced onion
- 1 teaspoon of soy sauce
- 1,5 teaspoons of ketchup
- salt and pepper
- vegan chicken (however much you like)
- 2 eggs
1. Cook the vegetables (including onion) and the vegan chicken in a pan with oil.
2. Add rice and the soy sauce, ketchup, salt and pepper. Mix well, then set aside.
3. Whisk the eggs, then put oil in the pan and make a thin omelette.
4. When the omelette is done cooking, scoop the fried rice onto the center and tuck the omelette's edges over it.
5. Flip the omurice onto a plate. Optionally, you can decorate it with ketchup.
Drink for when you're ill
Ingredients:
- 3 teaspoons of honey
- 1 teaspoon of cinnamon
- half a mug of milk
- half a mug of boiling water
Put the honey, cinnamon, and milk in a mug and then add the boiling water. Mix and enjoy!
Chili sin Carne
Ingredients (4 people):
- 1 red bell pepper
- 1 red bell pepper
- 1 chili pepper
- 2 onions
- 2 garlic cloves
- 250g kidney beans
- 285g corn
- 2 tablespoons of cooking oil
- 250g red lentils
- 4 tablespoons of tomato paste
- 800g canned tomatoes
- 1l vegetable broth
- salt and pepper
- cumin
- half a bunch of spring onions
- paprika
- half a bunch of spring onions
Wash the bell peppers and the chili, remove the core and cut into small pieces. Peel the onions and garlic and chop finely. Wash the kidney beans and corn and drain.
Heat oil. Sauté onion and chili. Add the bell peppers, lentils, tomato paste and garlic and fry briefly. Deglaze with tomatoes and vegetable broth and let it simmer for 10 minutes. Then add kidney beans and corn and simmer for 5 more minutes.
Add seasonings and you're done! This goes well with rice but is also good on its own. This recipe makes a lot by the way, so keep that in mind.
Creamy Chanterelles
Ingredients:
- 750g chanterelles
- 1 onion
- 1 garlic clove
- juice of one lemon
- 200ml milk
- 1 tablespoon of flour (preferably spelled flour)
- 2 tablespoons of crème fraîche
- half a bunch of parsley
- butter
- salt and pepper
- nutmeg
1. Clean chanterelles well. Brown with a bit of butter in a pan and set aside.
2. Finely dice onion and garlic. Put in a pan with butter and sauté until translucent.
3. Dust the flour over it and wait till slightly brown.
4. Deglaze with lemon juice.
5. Add the milk, bring to a boil while stirring constantly, then reduce the heat and let it simmer for a few minutes.
6. Season with salt, pepper, and nutmeg.
7. Add the chanterelles and crème fraîche.
Mix well and sprinkle with parsley.
Chocolate Mug Cake
Ingredients:
- 6 tablespoons of flour
- 3 tablespoons of cocoa powder
- 1/4 teapoon of baking powder
- 2 tablespoons of sugar
- 1 or 2 pinches of salt
- 6 tablespoons of milk
- 4 tablespoons of cooking oil
- 2 tablespoons of nut nougat cream
Mix everything in a cup, then put it in the microwave for about 2 minutes on high power.
Japchae
Ingredients (2 big servings):
- 100g glass noodles
- 100g tofu or vegetarian meat
- 50g carrot
- 100g onion
- 100g mushroom
- 50g spinach (or any salad)
- 100g mungo bean sprouts
- 1 stalk of spring onion
- oil
- salt and pepper
- roasted sesame (for garnish, optional)
Actually I usually just measure with my heart
For the sauce:
- 4-5 tablespoons of soy sauce
- 2 tablespoons of honey
- 1 tablespoon of brown sugar
- 1 tablespoon of sesame oil
- 1 tablespoon of ketchup
- 1 teaspoon of (sweet) chili sauce (optional, bc I am addicted)
1. Mix all of the sauce ingredients.
2. Chop all of the vegetables.
3. Prepare the noodles according to package instructions. (Mine just have to be soaked in hot water for 5 minutes)
4. Strain the noodles and rinse them under cold water.
5. If using vegetarian meat, fry it with a little oil and season with salt and pepper.
If using tofu, make a little more sauce and fry it in the sauce.
Set aside.
6. In the same pan, cook the vegebables until soft.
(Put them in the pan in this order: carrots -> onions -> spring onions -> mushrooms -> bean sprouts -> spinach)
Season with salt and pepper in between each "layer".
7. Put noodles and sauce into the pan, mix and make sure the sauce is covering everything evenly.
8. When everything is hot enough, garnish with sesame and serve.
